Pinacolery
I can be quite silly sometimes, especially with the way I describe the world I live in. Pinacolery might sound silly but I assure you its taste is quite heavenly. During my first few years away from Goa, I found myself homesick and always trying to create feelings of calm. I still haven’t gotten over being so far away from my beloved home but I have found ways to celebrate and appreciate living here in America. This juice is a perfect example of this celebration. I created this for my girls and husband. It’s my juice version of the popular tropical drinks you can find at Benaulim beach, in Goa. I think my version is sensational, simply because the celery offers the perfect amount of saltiness to the sour/ sweet of the pineapple. Adding coconut water just takes it to the next level in taste and cell nourishment.
Ingredients:
1 cup pineapple chopped
2 cups coconut water
1 stalk of celery
Serves 2
Preparation:
Juice the pineapple and celery together. If you can, use fresh coconut water. Mix the three together and garnish with a slice of lime or lemon. Enjoy!
